Appetizer for dinner (brie in pie crust)
Hey guys! Guess what? You really can put anything in those pie cookies. Even things that don't qualify as cookies. See above: brie.
Same deal as last time: pie crust, filling, pie crust. Pinch, seal, slit, bake. Individual goodness. For this, I used Smitten Kitchen's All Butter, Really Flaky Pie Dough recipe instead of the modestly sweetened pie crust from the apple pie cookies since it's a savory item. However, if you were to put a bit of blackberry jam in with the brie... Or apricot.. Well.. Sugar the pie dough up! (Within moderation, of course).
I used brie that I found at Trader Joe's, but you could really use any soft cheese you think would taste yummy warm, melted and wrapped in pie crust. I've seen small logs of brie at TJ's that would work perfectly in these--just slice and place in the pie crust.
These are great as party appetizers, sides, or.. dinner. Go ahead. I'm not judging.
